The water moves from the hypo tonic to the hyper tonic solution. And that is why it swells in the water, because water is hypo tonic than the inner apricot medium. Apricot placed in salt solution do not swell because salt solution has high concentration than pure water which do not allow water to move in or out.

a) Raisins are dried grapes. When they are placed in water, the water from the surrounding diffuses into the raisins and so the raisins swell up. The phenomenon involved is called osmosis.
b) When swollen raisins are placed in concentrated sugar solution, they will shrink. This process is called osmosis.
