The reason is, my friend - Valency.

Na and Cl donate and accept one valence electron respectively, whereas C and N shares electron.

By donating or accepting electron ions are formed!

Hey!!!

Atoms like carbon and nitrogen generally do not prefer making ions because they require a lot of energy to form ions. Whereas in the case of sodium and chlorine its easy because they gain and donate only one electron respectively. The difference in their valencies is one of the most important reason.
Carbon and Nitrogen prefer sharing elctrons rather than donating or gaining.
