Why do cake and bread rise while baking 2 biology?

Because of the Saccharomyces cerevisiae (Baker's Yeast) present in it. As it converts the sugar present into Carbon dioxide (CO2) and water. When the Carbon dioxide leaves the cake or bread it creates small holes in it, which makes the cake or bread to rise.
