Cooking softens exterior of vegetables as well as the cell walls within them. This allows entry of bacteria and mold that would be keptout by waxy out layer of plant. It also denatures many of chemical plants and makes the food poisoning.

Cooked food will spoil because it has moisture and bacteria like places with moisture. Uncooked food does not have any moisture so bacteria do not like to reside in it.
