When kept in salt water any water that remains in the dry apricot will move out of it and into the surroundings because the solute concentration on the outside is higher than on the inside of the apricot. This is because according to diffusion particles move from an area of high concentration to an area of low concentration so that the particles in the solute are evenly distributed in the solution. Therefore the apricot will remain shriveled.When kept in water the apricots have a higher solute concentration then it's surrounding, so water will naturally move into the apricot causing it to swell.

Apricot in the salt solution does not swell,because the outer solution is hyportonic.The water moves from hypertonic to solution.And that is why it swells in the water,because the water is hyponotic than the inner apricot medium .
