Why do dry fruits and vegetables not decay easily?

Because they do not have moisture...

Micro organisms survive more in moisture.

So if the fruits are dry there is absence of moisture.

Thus micro organisms cannot survive and feed on those fruits.

Fruits are hence saved from decay.
