farmers dry the paddy crop after harvesting because it is grown at moisture content between 24% to 26%.And delay in drying led to qualitative and quantitative loss during Yellowing caused by mild development and heat built up from respiration.

Because if paddy is wet. The paddy seeds may germinate and when farmers are ready to sell paddy. The customer will not accept to buy if customer will agree to buy. The customer give very low price to the farmers. This is the reason, the farmers dry the paddy crop after cutting them from fields!
