The fishes have gills. Gills are specialised to absorb oxygen that gets dissolved in the water. But, gills cannot absorb direct atmospheric oxygen. So, when fishes are taken out of water, they die.

Fishes breathe through lungs. They take dissolved form of oxygen in their body for respiration

When they taken out die due to absence of supply of dissolve oxygen
