There isn't a definite answer to this but it could be that because of the excitement of catching a fish that they want to gain more of that feeling therefore pushing and challenging themselves more. Catching a big fish needs patience which fishermen seem to have endless buckets of, so the challenge to catch a fish as fastly as possible could give them more fun out of the fishing leading to their love in challenges.
