Because they don't have lungs to breathe from the oxygen in the air
They can only breathe by taking water through their gills where the oxygen from water is absorbed.
Thus due to lack of suitable oxygen/ environment they lack stability and die when taken out of water.

cause they don't have specialized organs like humans to respire on land where moisture is in an extremely low percentage..the gills they have is only capable of respiring in water where gases are in a mixture..hope you know the importance of air
