When you go to hilly regions / mountains the atmospheric pressure decreases
Boiling point of water changes with altitude because atmospheric pressure changes with altitude.
As the atmospheric pressure decreases there, the boiling point also gets decreased
Suppose when the boiling point of water is 100° and water gets heated up till that temperature and when you put in vegetables, they get boiled at 100° temperature
Now when you are at a higher altitude, the boiling point decreases, say it to be 95°. So the water boils at 95° and it can't further increase the temperature, when you put in vegetables they get boiled at 95°. So they will be have to be cooked for a long time.
So it is difficult to boil food at hilly regions/ higher altitudes.
