HCl and HNO₃ dissiciates in water to form hydrogen ions ( H⁺) .The hydrogen ion combines with H₂o to form hydronium ions (H₃o).Therefore they show acidic properties . On the other hand compounds like alcohol and glucose do not dissociates in water and hence they do not show acidic properties.

HCl, HNO3 and other acids dissociate and give H+ ions in water while alcohol and glucose do not dissociate in water. Thus they do not show  acidic properties.
