It is a rather pointless statement that the leaf is boiled to kill the leaf, because once the leaf is removed from the plant, the rate at which the leaf could change any starch stored into sugars for respiration is too low to affect the levels of starch. (Unless you are going to pull the leaves from the plants and test several hours later, which rarely happens, any changes in starch levels are negligible).
