why do musicians pluck the same string at different points to play the instruments

They don't pluck the strings at different points, they hold them. Musicians do that because the length of the string affects the pitch. By holding the string in one place it's like the string has been shortened which changes the pitch.

They just hold them so that pitch can not be change :)
