Why do ordinary capacitors have capacities of the order of microfarads?

A Farad is a huge unit. ... It is the capacitance that will result as a result of 1 coulomb of charge being stored on it when an EMF of one volt is applied across it. One coulomb is about 6 billion billion electrons

For unmanageable area, ( greater than the manageable size of area) ordinary capacitors of reasonable size have capacitances in microfarads. However, electrolytic capacitors do have a much larger capacitance, ~ 0.1 F because of extremely small separation between the two plates.
