Due to heavy snowfall outside, people used to store the food at their home . Likewise in winters process of photosynthesis is very less due to less sunlight, plants are not able to process the food. so the used to store the food in roots and stems so that they can use it in winters.

They also store water like this store food to use it later :)

Examples :- Cabbage, Lettuce,spinach etc. Some can store food in their stem like sugar cane.
