On mastication(chewing) food is thoroughly mixed with saliva. Saliva has an enzyme called salivary amylase(Ptylin) which converts starch into a complex sugar called maltose and dextrins
Starch ------Salivary Amylase---> Maltose + Dextrins
The bread tastes sweet because of the conversion of starch present in bread into the complex sugar maltose.
