Why do some plants show wilting of their leaves at noon even though the soil is well watered?

Plants experience transpiration when exposed to hot sun in the afternoon.

It involves loss of water from the plant in the form of water vapour.

This rapid loss of water form the cells make them flaccid which in turn become loose making the plant droop or wilt in the hot sun.

Later in the evening they absorb the water from the soil and the absorption rate is more than the evaporation rate so the cells regain their water to retain their original shape.
