steam causes more burns than boiling water as steam contains the latent heat of vaporisation. latent heat of vaporisation is the hidden heat requires to overcome interparticle forces during conversion of liquid into vapours

The energy required to change water into its vapour at its boiling point without any change in temperature is called latent heat of vaporization of water and the specific value is to 2268 joule per gram or 540 calorie per gram the same amount of heat is released when 1 gram of steam condensers to form one gram of water at hundred degree Celsius it is on account of high specific latent heat of vaporization that thing causes for more serious burns than water at hundred degree Celsius.
