Why do the grapes do not fermented on the tree but when it is plucked it getfermented?

The main reason is till the grapes remain in contact with its tree it gets enough supply of food and water through photosynthesis of its leaves.

But when it is plucked or broken apart from its plant then its contact with its plant is lost and as it cannot do photosynthesis by its own it gets rotten or fermented.

Grapes hanging from the plant do not ferment because they are still alive and their immune system is still working. When they are plucked from the plant, their immune system stops working and hence, they ferment. Under anaerobic condition microorganisms like yeast ferments grapes and wine is formed
