Why do the taste of food stuff containing oils and fats change on keeping for a long time? How can it be prevented?

As the oily food is kept outside for a long time, then the fats and oils present in the food oxidises due to presence of air. This makes the food to give unpleasant smell and taste and becomes unfit to eat. This is called rancidity and this type of food is called rancid.

PREVENTION:

1. By refrigeration.

2. By adding anti- oxidants like BHA and BHD.

3. By keeping in air tight containers.

4. By stuffing the food with nitrogen gas.

as the oily food is left in open atmosphere for a long time, then it oxidises. this gives the food an unpleasant smell and taste. such process is called as rancidity.

it can be prevented with the help of following - by applying antioxidants, by storing in air tight containers, like chips manufacturers use nitrogen as antioxidant to prevent rancidity.
