Why do the vegetables such as brinjal and beans that are dry and shriveled start looking fresh again when put in a bowl of water for some time. why do you think the vegetables look fresh again? explain the process involved.

I don't know the process but I think because the water contains that chemical that fresh other things like us when we bath after 2-4 days we feel very fresh like that
