why do vegetable vendors regularly sprinkle water on the vegetables in their baskets

They do it so vegetable and fruit will be kept fresh for long time

To show them fresh thats it but it really spoils vegetables easily. But one thing is that cells on outer layer of vegetables gets fresh instantly and after then gets spoiled
