The veggies and fruit remains fresh when kept in refrigerator because when they are kept in the refrigerator the bacteria present in them which causes these veggies and fruit to be spoilt and stopped multiplying in low temperatures and hence they remain fresh for longer

Generally food item get rotten and expire because bacteria grows up after certain time. In side the refrigerator temperature remain constant around 5 degrees., which prevents bacteria to grow up. Generally these food bacteria don't grow at lower temperature, they need room temperature or temperature more than 15 degrees for growth.
