Why do we can't put very hot or cold milk to set curd

bcz the bacteria lactobacillus used in making curd will destroy if we will add them in hot or cold milk...... hope it helps... plzzz mark me as brainlist

the curd doesn't set with cold milk.very hot milk makes it unsweet
