Amla (gooseberries) are rich in Vitamin C, which is what causes the sour flavor. The molecular geometry of Vitamin C is similar to Sucrose/Glucose/Fructose and so when diluted, it activates similar receptors in the tongue, which causes a sweet residue on your tongue.

▪︎The high content of the citric acid makes the amla taste very sour at first but as you chew it some of the the enzyme salivary amylase which is present in the saliva converts the starch in the gooseberry to maltose (sugar). This is the reason for the sweet of gooseberries after its mastication in the mouth.
