We don't, a country will run just fine on its own. Entire continents have run on their own without politicians running them.

Governments and states (they are not the same things) do need to be run, however. The power to run them comes either from the consent of the governed or the consent of the enough other people with independent power to rule others. Politics is simply the process of obtaining the agreement and consent of other people. Politicians are those who engage in politics.
