Why do we not use the terms maize fruit and maize seed?What do we say instead?

We generally call them grains and not fruit or seeds. It is because in case of maize, the seed coat is fused with the fruit wall and hence it is not directly called so.

Normally, in case of fruits, the seed coat and fruit wall are separate. After fertilisation is complete, the ovary matures to form the fruit whereas the ovule remains as a seed within the ovary.
