SURFACE AREA!!
Usually in a cup or mug, you have a much smaller surface of (hot liquid) exposed to the air than you do with a saucer (sometimes twice as much).
The more liquid is exposed to the air, the faster it cools, and the quicker you can drink it without burning your mouth...

We prefer hot tea in a saucer than in a cup :-

==>As the surface area increases , the rate of evaporation would also increase.
