Why do we say food is oxidised when there is no oxygen in anaerobic respiration?

This is because if there is no oxygen, they cannot get energy from the food which they eat. Aerobic respiration produces more energy because a complete breakdown of glucose occurs during respiration by the use of oxygen.

the food is said to be oxidised in anaerobic respiration while no oxygen is used because oxidation is a process for which O2 is not necessarily required
