why do we see tiny droplets of water on the inner surface of the glass cover kept over a potted plant

This is because of transpiration

Plants lose water through their leaves in the form of water vapour in the process called transpiration. These water vapours when strike the walls of the glass, condense into water and appear as tiny water droplets.
