water from inside seeps out slowly

but the hot weather outside nudges it to evaporate

this heat is sucked from inside thereby making the water inside cooler

after one season of use the pores tend to choke with hardness of water thereby rendering the pitcher ineffective

you can see the white spots of this hardness on the outer surface of the pitcher

also, in rainy season even a new pitcher refuses to work because there is already plenty of water vapour in the air surrounding the pitched so that it refuses to accommodate any more of water molecules

obviously, this mechanism is not available with a metallic pitcher
