The time of a place depends on the longitude that passes through it. Therefore, the standard time for each country is usually taken as the time of the central meridian that passes through it. ... Thus, we need a standardmeridian for the country. In India 82 ½ °E longitude determines the standard time.

we use standard time because from gujrat to arunachal pradesh there is a time lag of two hours . hence time along the standard meredian of india (82°30`E) passing through mirzapur ( in uttar pradesh ) is taken as the standard time for the whole country
otherwise different regions of india would have different times , which would create problems ; so , to have one common standard time for the whole country , that's why we use standard time for example in railways if there will not same times then how can we catch the train with wrong times which can create a lots of problem that's why we use standard we use standard time
