Some things get excavated with a mattock and shovel, usually larger features like ditches or large pits. The things that get excavated carefully with smaller tools are usually smaller features such as postholes, or contain important finds or deposits. Something like a kiln, for example, could be taken apart more carefully. A pit, even a large one, containing a lot of small delicate finds such as glass or fine metalwork, would be excavated with small hand tools. A burial would of course be dealt with carefully. But “slowly” - not necessarily. If you are good, and know what you’re doing, and stay focused, you can have a complete skeleton cleaned, recorded and lifted in a single working day. Or certainly cleaned and recorded - lifted if there’s two of you working on it.
