The things that get excavated carefully with smaller tools are usually smaller features such as postholes, or contain important finds or deposits. Something like a kiln, for example, could be taken apart more carefully. A pit, even a large one, containing a lot of small delicate finds such as glass or fine metalwork, would be excavated with small hand tools. A burial would of course be dealt with carefully. But “slowly” - not necessarily. If you are good, and know what you’re doing, and stay focused, you can have a complete skeleton cleaned, recorded and lifted in a single working day. Or certainly cleaned and recorded - lifted if there’s two of you working on it.
