They eat mainly grass and leaves which are made up of Cellulose. Cellulose is a substance that can not be digested by humans as it is very complex. Herbivores that consume this substance are called ruminants. They have a four chambered stomach because:

When they first swallow food, it goes into their first stomach and get partly digested. Then, it comes back to the animal's mouth where it is chewed once again and sent to the second stomach.

Then it is digested in the third and fourth.

Basically, they easy the same stuff twice.
