Fats are turned into small type of globules because it helps to speed up the digestion process which is to be done by lipase enzyme.

Bile salts are responsible for turning tiny globules into micelles.

This helps to increase the area of surface for the lipid breaking enzymes to act upon the fats.

Answer:

Fats are not digested because of lack of any enzyme even up to stomach.

Explanation:

Then, after coming into the small intestine, it gets converted into large globules, due to high surface tension. Bile salts then make those tiny globules into micelles. This then increases the surface area for lipases to act upon.

Without those globules been converted into micelles, the lipases couldn’t have acted upon the fats converted into "glycerol and fatty" acids, leading to the presence of undigested fat in stool called steatorrhoea.
