When the liquid evaporates the particles of the liquid a get energy from its surroundings and loose its energy during evaporation , so the surrounding become cool and the water inside cooler starts evaporate. So now it absorbs energy from surrounding. Since it is a hot dry day water vapor in air is less. This is why desert cooler cools dry better on a hot dry day.
