Why does a dry apricot placed in salt solution does not swell while they do so when kept in water ?

Apricot in the salt solution does not swell, because the outersolution is hypertonic. The water moves from the hypotonic to the hypertonic solution. And that is why it swells in the water, becausewater is hypotonic than the inner apricot medium.

Dry apricot swell up in water because their cells have a high osmotic concentration

which causes passage of water into them ( endosmosis ) .

They do swell up when placed in salt solution because the external solution is hypertonic.
