Because, The oil has a slippery substance which doesn't allow any thing to be holded and that's why the glass slip when you hold it with oily hands.

FRICTION

If we try to hold glass with oil in our hand then it tends to slip because of reduction of friction.

Friction is the action of rubbing of one material to another. This friction helps to hold things tightly so, that it may not slip from grip. As friction increase then our grip becomes mre strong and if it is reduced then grip will get loose.

For example:- Our chances of falling from a rough mat is very less than change of falling from marble floor as friction is more in mat than on marble floor. It is because the surface area is smooth which reduces the friction.

Similarly, as we know that lubricants reduces friction such as oil. If friction is reduced then the grip becomes smooth and slippy and slips easily from our hand because of oil. That's why if we try to hold the glass with oil in our hand, it tends to slip.
