Why does a milkman add a small amount of baking soda to shift its ph from 6 to slightly alkaline?

alkaline medium doesn't allow the milk to sour easily

Becuz baking soda is a base which reacts with acids and neutralizes it. This prevents milk from getting sour and keeping it fresh for long time...
