why does a painter remove paint of his hands using turpentine and why not water​

Because it can stick to his hand and can cause skin infection.

Dry paint on the skin is very tough to remove with water because water is not able to dissolve the dried paint on the skin.

But, turpentine is easily able to dissolve the dried paint on the skin and that's why turpentine is more preferable than the water to quickly clear the paint on human skin.

Apart from turpentine , kerosine is also used for paint removal.
