Why does a piece of chapati taste sweeter after it is chewed for some time

because their is carbohydrates ( starch) present in it. the complex changes into the sinpler form sugar with the help the enzyme amylase secreted from the salivaey glands .

this is because chapatti is rich in starch ( carbohydrates ) and when starch is chewed, the salivary amylase in the salivary glands of our mouth breaks down the complex starch and convert it into simple sugars ( glucose ) which is sweet in taste. that's why when we chew a piece of chapatti, after sometime it taste sweeter.
