at high altitude potato's intermolecular force will also increase, then heat energy is required first to break its intermolecular force so potato will boil slowly.

if Ur boiling potato in water then the water will boil fast because boiling point of water is low and since it takes more time to boil potato it surrounded by water that's boiling at lower temperature
