The potted plants die when they are overwatered because the roots will not get enough oxygen to breathe as water fills up the airspaces present between the soil particles. The potted plant die when it is given excess of water because it can't hold the capacity of water it causes suffocation for plant.

When the plans get overwatered then the water fills the airspaces between the soil and the roots are not able to breathe because of lack of oxygen. Slowly the roots start to decay and after some time the plant dies. For breathing plants need oxygen to survive which they get through their roots. The oxygen is used to break down glucose into carbon dioxide and water to produce energy.
