Why does a protective layer get formed around the fertilized egg of a hen?

In hen, after fertilizations process, the zygote divides to form embryo which travels down to oviduct. During that travel, many protective layers are formed around embryo. The embryo gets oxygen through protective layer, protection from albumen around embryo and food from egg yolk present around embryo.
