Why does a stain of curry on washing with plenty of water turns yellow?

Soap being basic in nature turns the colour of the turmeric from yellow to reddish-brown. After washing with lots of water the soap is removed and the turmeric returns to its yellow colour.

It also has a pigment called as carotene, which is reddish orange in colour. When turmeric comes in contact with detergent or soap it reacts with the fatty acids present in the detergent/soap and hence the carotene pigment gets more active than the xanthophylls and turmeric turns red.
