Because thermocouples involve a very weak (low voltage, low current) that does not increase with the area of contact, they are usually very small and have both a small thermal generating capacity and small holding in changing temperature. In fact, the primary reason for making thermocouples of heavier wire is the chemical one of oxidation and surface area in a furnace, etc. Heavier wire makes a slower response time.
