It is because turmeric contains an acid (tartaric acid), while the soap or detergent contains a base (sodium hydroxide)as soaps and detergents are basic in nature. When an acid reacts with a base, neutralization reaction takes place and the stain becomes neutral.and the neutral colour of turmeric(huldee) is red so the stain turns red.
