Very Good Question. Thanks for asking !!!!

well, as We Know Earth is a  very huge planet which revolves around Sun due to which we get seasons.
So, when One hemisphere of earth is having summer, the other hemisphere will have winter.
Where its summer , Even though due to heat , if water gets evaporated the other hemisphere of Earth which faces winter will store water.
And always in Nature, Evaporation and condensation occurs simultaneously the rates may differ.

Hence due above stated reasons, all the water of the earth does not get evaporated during hot summer day

Answer:

All the water of earth will not evaporate during hot summer days because one of the hemisphere of earth has winter and another has summer at same time. Therefore, one side water bodies are evaporated whereas another is freezing water and store it in the snow form.

Overall the evaporation and freezing occur simultaneously on Earth so all water does not evaporated. It also maintains the overall temperature of earth by two processes at same time.
