why does baking soda makes dosa softbut not spongy. How are baking doda and baking powder are different?

Baking soda has only sodium bicarbonate where as baking powder has 2 acids other than sodium carbonate that are monocalcium phosphate and sodium acid pyrophosphate or sodium aluminium sulphate..
